Daniel Fast/ Vegan Friendly Mac and Cheese without Cashews



Hello, Hello, Hello! 



I have to admit that I am very surprised that this came out this good! 
I do see some recipes that contain cashews which I would like to try! But I want you to be able to create this cheese where it is inexpensive and you most likely will have the ingredients in your fridge already. 
Now the one ingredient you may not have that is a must-have in your cabinet when you want to make dairy free cheese is Nutritional Yeast. Nutritional Yeast is not an active yeast that is restricted during the Daniel Fast. So it is ok to have o the Daniel Fast! 
You are going to be so surprised at how simple this is! 

Let's get Started! 

You Will Need: 

Cheese Sauce
  • 4 Potatoes (Preferable Yellow or Yukon) 
  • 3 Large Carrots 
  • 1/4 of a Small Onion 
  • 1/2 Cup of Nutritional Yeast 
  • 2 Tablespoons of Garlic Powder 
  • 2 Tablespoons of Onion Powder 
  • 1/2 Tablespoons of Cayenne Pepper
  • 1/2 Tablespoons of Tumeric 
  • 1/2 Tablespoon of Paprika 
  • 1/2 a cup of Water
  • 2 Tablespoons of Apple Cider 
  • 1/2 of Lemon Juice 
Noodles 
  • 1 Box of Whole Wheat Noodles 
  • 1 Tablespoon of Sea Salt 
  • 1/2 Tablespoon Pepper 
  • 1 Tablespoon of Olive Oil 

First cut up your Potatoes, Onion, and Carrots into a pot to boil until they are tender. Make sure the cuts are the same size for even cooking. You can peel the potatoes before or after you boil them and make sure you cut the ends off your carrots before boiling. 

After your veggies are tender drain them, keeping 1/2 a cup of the water that the veggies boiled in. Let them cool down for a few mins. 
Add them to a blender and begin to pulse them. Add half of the water in the blender. You may not need all the water. Next, add all your other ingredients. If it very thick, add your other half of "Potatoe Water."
Your cheese Sauce should be a smooth consistency. 

Simultaneously, Boil 5 cups of water. Add your sea salt and oil. Once at a rapid boil add your noodles. Allow the noodle to get to a rapid boil and turn your eye down to low and pop the top on until they are Aldente! 

Drain your noodles and then add your cheese sauce! This is ready to be served! 

Remember to taste to see if you need to adjust your seasoning. Then eat up! 

Please note to make double this recipe. I was so disappointed I did not have any more left. This can last for up to 1 week in the fridge. I have never frozen so I am unsure if you can freeze this.
