Eggplant Sandwiches


I hope you are having a healthy day today! I want to give a shout out to Maria Rappa on IG for requesting this recipe!
So Eggplant sandwiches have come to be a favorite in our house. I began making Eggplant Parm that turned out to be a HUGE hit and decided to take to fried eggplant before we drench it with cheese and sauces and actually try it on a sandwich!
I tell you it was the best idea to think of because it is so darn yummy. Now please note that this recipe is the first part of my Eggplant Parm Recipe!

This is pretty simple and easy to make so let's get started!

You Will Need:
1 Eggplant
1 1/2 Cup of Milk (We used Soy Milk)
2 Cups of Flour
Coconut Oil
Tofutti Sour Cream

Seasoning:
Salt
Pepper
Cayenne Pepper
Garlic Powder
Liquid Smoke
McCormick Bacon Bits (Vegan-Friendly)

First, you want to cut your eggplant into 1/2 inch circles. Season with a little salt and pepper. Take your Soy Milk or Milk of choice and add your liquid smoke. About 2-3 Squirts.
Next, Mix all your seasonings to your flour. Use a Tablespoon each with the exception of Salt and Pepper. And of course, you can add or subtract to seasoning choices. You are the captain or your eggplant fry.

Now proceed to do the normal procedure of frying, dipping your eggplant into milk, then in your flour mixture.
If you want a thicker coating on your eggplant you can double the process but this is not the healthiest option.

Fry on each side until golden brown, for about 5-8 mins each side.
Continue this process until you are done.
Grab a yummy Garlic infused bun or your bun or choice and add 3-4 on the bun. Add some Romaine Lettuce, tomato, Tofutti Sour Cream, and top with your Bacon Bits. Add a side of popcorn and ENJOY!!!
