Hello Hello Hello Again!
I am often asked if I eat eggs. And I have to be honest I do. I enjoy them but not all the time. I prefer them mixed into something like a cake or where I can not see them. I just to eat eggs almost everyday for breakfast if I could figure out a way to but now I am not interested in them like I use to be. So if you do not eat them or you want to try something different Tofu Eggs are a great alternative! Lets get started!
What you will need:
- Half a block of Tofu
- 1/2 of a Large or 1 Small Yellow Onion
- 1/2 Green Pepper
- 1 Tbsp of Fresh Garlic or 2 Tsp of Garlic Powder (Fresh is the best)
- 1 Tsp of Sea Salt
- 2 Tsp of Tumeric
First, sauté all of your onions until they are translucent. Next Add your Pepper. Please note you can add other veggies like, mushrooms, Jalapenos, Etc.
Next add your block of Tofu. Grab your knife then begin smashing your tofu allowing the tofu to go in between the prongs of the fork.
After the tofu looks like white eggs add all your seasoning expect your turmeric. After you have mixed all the seasoning well add your turmeric and continue to stir until your tofu takes on that yellow egg color! If for some reason your tofu eggs look too yellow. add little more tofu because there is other size blocks of tofu. So the result could vary but only slightly.
Then you can add these bad boys with your favorite breakfast meat, grits, sandwiches, and even in breakfast wraps.
