How to Make Cauliflower Mac And Cheese

Welcome back to another episode of H.I.S. Food! In this blog post you will learn that how to make an alternative to the high fat, high calorie, high carb classic, Mac and Cheese! I know the struggle when it comes to losing weight and keeping it off. I should know because of how I have recently gained 20 pounds with just indulging in unclean foods. Now with alternatives like these you can enjoy the rewards of calorie classics with out all the calories! Lets get started!

What you will need:

  • 1 Fresh Head of Cauliflower (Med-Lg) 
  • 2 Blocks of Cheddar Cheese 
  • 2 Tablespoons of Low Fat Cream Cheese 
  • 1/2 a Cup of Oatmeal Flour (CLICK HERE FOR HOW TO MAKE OATMEAL FLOUR) 
  • Two Table Spoons of Coconut Oil 
  • 2 Cups of Mexican Mix Cheese 
  • 31/2 Cups of Reg Almond Milk 
  • 1 cup of Panko Bread Crumbs 
First take your Cauliflower apart and cut med- small florets. Season your florets with Salt and Pepper Second, get yourself a pot of water. Season the water with Salt and Pepper. Let the Water come to a bowl and then add your Cauliflower. Lets the Cauliflower Cook for about 10 mins on Med Heat Uncovered. Do not let it cook too long. Remember this will still go into the oven and does not have to be cook thoroughly at this step. 
Once the Cauliflower starts to turn translucent take them off the stove and pour them into a bowl with ice cold water to shock the Cauliflower and cause it to stop cooking. 
Then take allow the Cauliflower to drain. Use Paper Towels or Kitchen Towel to Dry out the Cauliflower! ******THIS IS A VERY IMPORTANT STEP Please Dry Thoroughly ******* 

Now for our Sauce...... 

Add in a sauce pan your Coconut Oil. Add your Oatmeal Flour. Allow the mixture to thicken up and then slowly add some Almond Milk and all your Cream Cheese. Let it thicken, and again slowly add your almond milk. Repeat this step one more time. If for some reason the mixture does not thicken up add more Oatmeal Flour. 
Now its time to add the cheese. 
Make sure your blocks of Cheddar Cheese has been sitting out to get to room temperature. This will allow easier cuts. Cut the pieces into med size cubes and gradually add them. Add about four pieces at a time. Let the cheese melt and stir in some more milk. Repeat this step until all the cheese is gone. 

Now its time to Assemble! 

Grab your favorite casserole pan and add your 1st layer of Cauliflower, which is half of your cooked cauliflower. Then Add half of your Cheese Sauce to the pan covering all the Cauliflower. Then add one cup of your Mexican Mixed Cheese. Add the rest of your cauliflower and repeat the same exact steps. 
Baked this on 375 Degrees for about 15 mins or until the cheese is melted. Please put your casserole dish on a baking sheet to capture any juices that may form. 

Once your cheese in bubbling and melted you may notice some moisture. Add your Panko Bread Crumbs and allow the Crumbs to soak up the Excess water from the cauliflower. Cover the entire top and add more crumbs if needed. 
Place your casserole bowl back in the over and turn your broiler on to toast the top. Place on the bottom rack far away from the broiler as possible for no more than 3-5 mins. Keep a close eye so you do not burn the crumbs.
